This topic, do you mean fighting games or beat-em-ups, or both?
I haven't played many fighting games, my favorite would have to be Dragon Ball Z: Hyper Dimensions.
As for beat-em-ups, Double Dragon. Especially the arcade version.

Marvel Vs. Capcom 2, honestly, it's one of those games where you figure you can play just an hour of it then go to sleep, and when you finally realize that it's 7 hours later, the sun has come up. SO MANY CHARACTERS! You can even play as the original Mega, Roll and Tronne Bonne from Legends. Plus you can even be one of those cute lego guys. OWW! Painful spinning thumb memories!

Those are my top 3 favorite fighting games.
