For example, Beyblade is about tops, Hikaru no Go is about Go, Prince of Tennis is about tennis, and Hajime no Ippo is about boxing.
These examples (among many others) clearly state that there's an anime for just about anything, so what do you think will have an anime about it made next?
I can see an anime on yo-yos being made sometime in the future. And just possibly, maybe even an anime on break-dancing.

I've always liked the anime-styled artwork for SSX games. It might be fun to see what kind of an anime they could make out of the SSX franchise. There isn't a whole lot that hasn't been done yet. There's even an anime called Ping-Pong Club!

You know, the arcade game with two white rectangles and a white ball. That goes "blip-blip. Have two Tron looking characters doing matrix like moves with a virtual ball?

I'm pretty sure that at this point, most sports have at least manga now.
I've also found stuff about rollerblading, kendo, skating and even bowling. 
(I also once found a manga that I think was about organ donors, but I'm not sure XD)
As for what I'd like to see...
Badminton maybe? |

I think it would be cool if they something on eating contests XD. all the action in it! all the .. eating... in... it... scratch that idea.... >_<

I don't think it's specifically poker, but I'm pretty sure there's a manga/anime about gambling in general. |

I want an anime about DDR. XD Heck, I'd even take a manga full of chibi DDR characters running around and doing...stuff. <3
But on a more serious note, I'd like something...involving band or orchestra. ^_^

I would say Online Gaming, but .Hack has already gone about doing that. Maybe there can be another that centers around more than an RPG. Maybe one that centers on Online Gaming as a whole with numerous different games in a single anime.

I thought I was the only one to think up battling yo-yos. But what I really want to see is an anime about skydiving for some reason. |

I think there's an anime called Gravitation about a boy who wants to be a singer or something...
Damn..you took my DDR idea...("Believe in the heart of the DDR machine!")
Hm...an anime about people who play video games against each other wouldn't be bad either (y'know, like an arcade king type of thingee), though I've been told there's something like that already... |

Is there one about working? Maybe in a restaurant with wierd employees and customers? That seems like something that would be fun.
That, or something about the soda industry. Why, I don't know, but it seems possible.
